Nancy’s Hustle — EaDo’s Neighborhood Bistro with a National Reputation
Every neighborhood dreams of a place like this: close enough to walk to, good enough to fly for. Nancy’s Hustle sits on an unassuming EaDo corner pouring natural wine and stacking its famous little pancakes with trout roe, while critics from the coasts keep sheepishly adding it to best-of lists.
The Story
The founding trio — chef Jason Vaughan, with fine-dining chops from Chicago, restaurateur Michael Sambrooks and wine-and-spirits veteran Sean Jensen — opened in 2017 intending a casual bistro for the block. The block turned out to be the whole country: a Bon Appétit best-new-restaurant ranking arrived within the year, and James Beard recognition has followed repeatedly. The Mad Max-referencing name promised scrappy energy, and the room still delivers it.
What to Order
The Nancy Cakes are non-negotiable — sweet corn pancakes, whipped butter, a spoonful of trout roe, gone in four bites and remembered for weeks. Follow the seasons after that: bright vegetable plates, Gulf seafood, pastas that change with the market, and a burger that quietly competes with anything in Texas. The sourdough with cultured butter deserves its own paragraph; the natural wine list deserves the evening.
The Space
Small on purpose: warm light, tight tables, records-and-dinner-party acoustics, an open kitchen close enough to watch. Date-night intimate without romance-package clichés — the mood is generous, a little loud and completely unpretentious.
